I don't want to get all philosophical on you all but lately I am feeling more overwhelmed than usual and this quote just stopped me in my tracks. I already have too much $h!t going on a daily basis with work, CrossFit, blogging, military graduate school, family, keeping the house somewhat clean, and the list goes on and on. But the moment something gets added to my plate, I BREAK! I SCREAM! I GET IN THE FETAL POSITION AND CRY! Ahhh! And this week, I did all of the above. Ok enough of the theatrics, but it is all true. My husband says I am a martyr and martyrs love stress, but come on, a girl can complain, right? Now I will say I do put a lot on my shoulders and I will admit that I would not have it any other way; I am wired to be busy. I am naturally high-strung. I get it, but no matter how you look at it, it is still hard. Life is hard and I will stop there but am I the only one feeling like this these days?

Getting back to the quote that got me "to stop and smell the roses" per say, at the end of day I have to remember that life is life and no matter how shitty or GREAT and productive your day is today, tomorrow is a whole new different day with new promises or, for that matter, new struggles. I need to remember, life is a disco ball that keeps turning and turning. I need to stop stressing that my house isn't perfect EVERYDAY or stop feeling overwhelmed when I feel like my kids are the only ones who are NOT doing 13 different activities all before the age of 3. Seriously why is it that every kid I know has played on 3 different sports teams and dances, does karate, boys/ girls scouts, etc?!?!? I personally rather let my kids be kids and have fun and play outside, instead of rushing them to activity after activity. Don't they have their rest of their lives and school years to do that? Does it make my boys less likely to get accepted to Harvard than the next kid if he isn't enrolled in Little League before the age of 3? I don't want to get on my soap box and all but this last topic has been really bugging me lately and honestly keeping up at night. Anyway, I digress as usual, but I am making a really conscientious effort to be better at relaxing, enjoying the moments I have with my boys and most importantly laughing EVERYDAY with them.

So getting back to blogging, I love blogging. I love what I do and my only complaint is I cannot do it full-time. Maybe one day I will make enough money that I can blog/ mentor/ coach 24-7 but until then I will do my best to keep you all posted and share the recipes and things in my life that make my life a little bit easier. Someone once asked me why I don't have many treat recipes posted on the blog. As much as I love treats, who has time for that? My blog is raw, what you see is what you get. The recipes I post are the recipes you will see on my table at any given night. And to be honest a treat is a treat, whether it is Paleo or not and quite frankly we rarely eat treats. I will leave the baking to the experts. Most of my recipes are easy, made in the crock pot using simple and inexpensive ingredients. There are no frills when it comes to my recipes and I hope you all don't mind that and you stick around.

So having that said, here is my no frills, delicious crock pot beef fajitas recipe. It is so good. I wrap them in a huge romaine lettuce leaf when I am in the mood for "tacos" or I serve them over my no grain cauliflower lime rice when I want something more hearty. Heck I even served this beef over a salad too. So whichever way you decide to eat it, I can promise you, you will not be disappointed. Just don't forget the guac or avocado!

Paleo Crock Pot Beef Fajitas

  • 2lbs of flank steak OR beef sirloin tip (any lean beef cut will do)
  • 1 large onion, chopped
  • 1 large poblano pepper or 2 jalapeños (if you can take the heat), seeded and diced
  • 2 color bell peppers, seeded and chopped
  • Homemade Spiced Rub:
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • 2 teaspoons of chili powder
  • 1 teaspoon of cumin
  • ¼ teaspoon of garlic powder
  • ¼ teaspoon of onion powder
  • ⅛ teaspoon of cayenne pepper (add ¼ if you like the extra kick)
  • For Serving:
  • fresh avocados or homemade guacamole, lime slices, fresh cilantro, non-grain tortillas, romaine, chopped cherry tomatoes, etc.
  1. Prepare ingredients from salt to cayenne pepper in a small bowl and then rub your aromatic spiced rub on all sides of your beef.
  2. Place your spiced rub beef at the bottom of the crock pot.
  3. Chop all your onions and peppers and place over the beef in the crock pot.
  4. Cook on low for 9 hours and enjoy. I know people get uneasy about leaving a protein in the crock pot all day that does not have a lot of liquid because they think it will burn, but I can assure you it will NOT burn. The vegetables and beef will emit a lot of juices in the cooking process which will give it enough to keep it moist. The last thing you can say about this meat is that it is dry; scouts honor!
  5. When you get home or at the end of the cooking time, shred the beef and mix your veggies and enjoy. I serve mine with big romaine lettuce wraps to substitute for a tortilla. I have also served it over my Cilantro lime cauliflower rice and eaten as is. Don't forget to top it with fresh avocado. I usually make homemade guacamole with just avocado, cilantro, fresh squeezed lime juice and a little salt)
  6. Eat up and enjoy!
